Thursday Thirteen II: Dishes Mama Cooks

Thirteen Meals I Love to Make:
1) Monterey Chicken with Smashed Sweet Potatoes: Everyone loves this; it’s got chicken, bacon (well, turkey bacon but they don’t know), barbecue sauce and Monterey Jack cheese. What’s not to love!
2) Enchiladas with Spanish Rice: I love to twist these up in different ways. Sometimes I go meatless and other times I add whatever meat I have on hand. Black beans and cilantro are A MUST! Top them with black olives and sour cream and it’s heaven.
3) Buffalo Chicken Salad: Mmmmmm…a throwback to my hometown of Buffalo, NY. Pan fried (in olive oil, of course) chicken tenderloins, tossed in a small amount of butter and Frank’s Hot Sauce, served over fresh cut romaine lettuce, roma tomatoes, cucumbers and served with blue cheese (Roka by Kraft is what I love).
4) Cheese Quesadillas/Taco Night: What else do you need to know about this? Actually, these are much better in GA. The tortillas that are found here are primo!
5) Pork Loin and Cauliflower Bake: A good ole low-carb meal. Sometimes, if I want to carb it up I’ll make mashed potatoes instead. Actually, I made this for Michael and I in Buffalo one time and I gave him an appetizer of lemon-butter shrimp. I still remember the smile on his face!
6) Pace Chicken: A childhood favorite of Michael’s that his mother used to make. It’s got rice, chicken, picante sauce, and some more yummy ingredients!
7) Cowboy Casserole: Another childhood fave of Michael’s. Mikey now loves this one, too!! It’s a “Mike” dish!! ;)
8 ) Stuffed Grape Leaves: So easy to make and so tasty. I am in need of finding some grape leaves to make. This reminds me of that and I can’t wait to make it. I serve it with yogurt, of course!
9) Kung Po Chicken: I found this recipe on one of my mommy boards once and can make it every night. It’s so good and fresh tasting.
10) Garlic-Basil Shrimp over Brown Rice: There are sun-dried tomatoes in this and it’s just soooo zesty. I loves this. One time I served it over linguine but I prefer the rice!
11) Cheeseburger Ring: One of my online friends shared this recipe one time and it’s just so easy and yummy. It’s a good “go-to” meal. It’s uses crescent rolls, burger meat, and Velveeta cheese. The kids all melt for Cheeseburger Ring!
12) Pasta with Artichokes, Cherry Tomatoes, and Four Cheeses: It’s one of the Giada dishes that you toss in the pan…so delicious!
13) Breakfast for Dinner: The works….eggs, sausage, bacon, pancakes w/ real maple syrup, and fruit!
I’m so glad dinner’s in the over (Monterey Chicken) because I’m freakin’ hungry now!!
