Nervous

I shouldn’t be nervous, but I am. I’m not cooking for a magnitude of people. I just want it to be perfect.

Let me backtrack a bit:

Prior to 2004, I rarely cooked. When I did, it was out of a box. You know, those Bisquick meals, Kraft dinner, Hamburger Helper, Campbell’s Soup? Those were my specialties. Me? Take a piece of meat, season it, and bake it? Me? Whip up something from scratch and actually feed it to loved ones? Never. I even boiled water incorrectly. Stop laughing at me, please.

In 2004, something changed. I took control of my eating habits and started to teach myself how to cook. I printed recipes (low-carb ones, as I was low-carbing it), followed them, and even got a little wise to the ways of cooking. I started to put meals together, without Michael’s help, that actually tasted good. I was growing up and realizing that I wasted a lot of time, cooking out of boxes. I literally stepped “out of the box” and started formulating my own way of cooking. It felt good. It still feels good.

I cook a lot these days, and I actually enjoy it. This is why I’m at a loss at this nervousness I’m feeling. I’m cooking Thanksgiving dinner on Thursday. It’s going to be for the kids, myself, and Mo’s family. I’m making an herb rubbed turkey, candied yams, green bean casserole, and cranberry chutney. I’m going to call my mother-in-law and get her recipe for corn bread dressing, and I might add that to the menu, too.

I guess this is my trial run. If it goes off without a hitch then I’ll have to invite everyone over next year for Thanksgiving. Wouldn’t that be something? At least I know that I won’t be leaving the giblets in the bird like my aunt did one year. Man, that was the worst “feast” we’ve ever been invited to, EVER! I distinctly remember turning to my mom to say, “If you ever give up cooking Thanksgiving dinner again, I’m going to the Chinese Buffet!”

I’ll miss having my mom cooking the traditional dinner, but we’ll be having that with them next month when they come down for a Christmas time visit. It’s gonna be strange having my dad around for the holiday, but I’ll save that for another blog post.

Oh and.. after that low-carbing stint in 2004, this was the result:

    I love to cook but I’m no expert.You’ll do fine-I’ve done it and if I can do it u can! Down to the homeade cranberries.Organization and prep time ahead is the key!

  5. Good luck! I’m doing the cooking this year, too, but it’s my third time, so I’m a little less nervous about it. My fingers are still crossed that everything turns out okay, though!

    The trick is inviting everybody and then giving them all food assignments. That still usually leaves you with the turkey to do at least, but it’s MUCH easier. I’m about to dole out assignments to my crew, for that matter. I’m nervous about getting the house cleaned up in time. Now THAT’S a scary proposition.

    Oh wait… the whole living in different countried thing might hinder it. Oh, and the fact as Thanksgiving isn’t something we do over here I have no idea when it is, lol.

    Good luck honey, you’ll be grand, it’ll all taste superb and you’ll be blushing like mad from all the compliments on your wonderfully edible meal!

    The first time you cook a holiday meal is scary, but I’m sure it will be amazing – and if it doesn’t there’s always pizza delivery – the food isn’t really the point anyway. But yummy….
