Rate the Hate | Sunday’s Dinner

Michael was supposed to be home last night.
Michael was supposed to be home today.
Michael is still not home.

Why? Because some fish smellin’ ho that works dispatch hates men, that’s why.

So, my lovely dinner for today got bumped to tomorrow. It’s ok. No, it’s not. My husband should be next to me right now, our bellies still full from the grand feast. Instead, he’s in Godforsaken Milwaukee (sorry Mikwaukeeans), and I’m here. Bah. Don’t get me started on the fish cake that wouldn’t release him of his duties. Hahaha! I said duties, but I digress.

MONTEREY CHICKEN, MASHED SWEET POTATOES, and SALAD

boneless skinless chicken breast
barbeque sauce
well cooked bacon, drained
mixture of Monterey Jack and Sharp Cheddar Cheese

  1. Pound chicken breast until it is somewhat flattened, and season with salt and pepper.
  2. Spray Pam in a nonstick skillet, and cook chicken breast until it is done.
  3. Transfer to a serving plate.
  4. Top chicken breast with Barbeque sauce, bacon, and cheese.
  5. Broil chicken breast in the oven, or melt the cheese in a microwave.
  6. Sprinkle with a small amount of cold chopped tomatoes and chives.

Pare potatoes, cut in half lengthwise if large, add boiling water, cover and boil gently 20 minutes or until tender. The water should be practically evaporated. Drain off any remaining water. Mash or put hot potatoes through food mill or ricer, add butter, salt and milk; stir until smooth over heat. Remove from heat, quickly beat in desired flavoring and turn into hot serving dish. 4 or 5 servings.

Salad (self explanatory)

All this together equals one of our family’s favorite meals!  I can’t wait, and I know Michael will appreciate it!!
