Project 365 (337/365)
Dinner is well under way. This whole chicken that I am roasting will be turned into two meals. Chicken Enchiladas and Chicken Salad. And, just so it is widely known, I have a whole bunch of cilantro waiting to be chopped up to go into the enchilada mix. Along with Rotel, lime, yellow rice, and cheddar cheese.
Dinner’s at 4 o’clock today. Do you need directions?

I am leaving right now. I’ll bring, um, my appetite. That sounds delish and even frugal-ish killing to dinners with one bird, or however it goes. ;)
