in a perfectly dirty pair of worn-in dungarees.

Cowboy Casserole* is your favorite
birthday meal.

Happy Birthday! Thank you for saving me from blinkie mania in my bulletin board phase of the 1990′s. Thank you for believing in me and helping me achieve my goals. Thank you for giving me four beautiful (and loud–they totally get that from your side of the family and it has nothing to do with being Macedonian) children. Thank you for being my best friend and lover.

*Cowboy Casserole
1.5 pound ground meat - browned
1 cup chopped onion – add to meat in skillet until onions are clear in color
1/2 cup chopped bell pepper – add to meat and onion until soft
Drain liquid from meat, onion and pepper mixture
Pour mixture in large bowl and add:
- 1/2 cup uncooked rice
- 1 can cream mushroom soup (small can)
- 1 can chicken noodle soup
- 1/2 can water
- 1-teaspoon salt
- 1 package grated cheese (your choice)
Mix everything together then pour into a large, covered baking dish (be sure to butter dish first.)
Cook @ 350 for 1.5 hours.
Enjoy with your cowboy (or birthday boy!)
