How To Make Cauliflower Bake
I started making this side dish years ago when I started a certain low-carb diet, and it’s such a yummy compliment to many of the main proteins I prepare on a regular basis. It goes well with chicken, pork, beef, and (even) fish. Best of all, it’s easy to make!
Step 1: Cut up and fry bacon. You can use turkey bacon, as I have in the past and it was just as good. In a pinch I have used ham and sausage, too. Feel free to use whatever (or nothing) you desire.
Step 2: Chop green onions. In my opinion, the more the better!
Step 3: Boil frozen cauliflower (I use two bags) or use a fresh head (it will just take longer.)
Step 4: Shred cheddar cheese (I prefer to shred from a block as I think it just tastes better, and often times it’s cheaper.)
Step 5: Combine cooked cauliflower, bacon, onions, cheddar and cream cheeses (I don’t measure, but if I had to I would say about a cup of cheddar and about 2 TBSP of cream cheese.)
Step 6: Add salt and pepper (to taste.)
Step 7: Mix it on up!
Step 8: After it’s mixed top with Paprika and bake for 20-30 minutes at 350 degrees. I usually broil it for a couple minutes to brown the top of the dish.
Step 9: Plate it.
Step 10: Enjoy.
On this night I paired it with corn and oven-baked chicken thighs and legs.
