How To Make Cauliflower Bake
I started making this side dish years ago when I started a certain low-carb diet, and it’s such a yummy compliment to many of the main proteins I prepare on a regular basis. It goes well with chicken, pork, beef, and (even) fish. Best of all, it’s easy to make!
Step 1: Cut up and fry bacon. You can use turkey bacon, as I have in the past and it was just as good. In a pinch I have used ham and sausage, too. Feel free to use whatever (or nothing) you desire.
Step 2: Chop green onions. In my opinion, the more the better!
Step 3: Boil frozen cauliflower (I use two bags) or use a fresh head (it will just take longer.)
Step 4: Shred cheddar cheese (I prefer to shred from a block as I think it just tastes better, and often times it’s cheaper.)
Step 5: Combine cooked cauliflower, bacon, onions, cheddar and cream cheeses (I don’t measure, but if I had to I would say about a cup of cheddar and about 2 TBSP of cream cheese.)
Step 6: Add salt and pepper (to taste.)
Step 7: Mix it on up!
Step 8: After it’s mixed top with Paprika and bake for 20-30 minutes at 350 degrees. I usually broil it for a couple minutes to brown the top of the dish.
Step 9: Plate it.
Step 10: Enjoy.
On this night I paired it with corn and oven-baked chicken thighs and legs.

Apple Dumplings
A big huge THANK YOU to my cousin, Pauline, for suggesting these during an evening conversation while I drove home from a photo shoot.
The kids thank her. Michael thanks her. I think Summer even thanks her.
Ingredients for Individual Apple Dumplings (which are kind of like pie, which totally rules the planet)
Refrigerated Pie Crust (you could most certainly make your own; I’m looking at YOU, Rachel Matthews)
Apples (peeled and sliced)
Brown Sugar
Cinnamon
Nutmeg
Kraft Caramels
Butter
Optional ingredients include raisins, walnuts, and really whatever your pie’ish loving heart desires
Directions (that are really easy to follow and might make you laugh or cry)
(Preheat oven to 400* and spray baking sheet with cooking spray)
1) Cut top and bottom pie crust dough into quarters
2) Roll out with rolling pin
3) Place apple slices in middle
4) Sprinkle sugar and spice
5) Add caramel to center
6) Wrap up dough around apples and stuff
7) Brush with butter
8) Place into oven for 20 minutes (I checked them at 15, and at 20 they were perfect)
9) Take out and place on plate/bowl
10) Scoop some whip cream or vanilla ice cream on top
11) Eat (which will sound like this: nomnomnomgobblenomnomoh!)
12) Listen to your family “oooohhh” and “ahhhhh” over this yummy treat
13) Feel full, but wish for more
14) Go to store to buy more pie crust
15) Repeat and gain back all the weight you lost (wait?! WHAT?!)

How To Make Your Own Iced Coffee
Oh, how I love the place with the green straw.
Oh, how I don’t love paying over two dollars a cup, when I can get a 2 pound bag of nice, oily, delicious, and flavorful beans* for about ten dollars.
Here’s what I do to solve this little dilemma:
- I make a strong, strong, strong, strong, strong pot of coffee. Strong, did you get that? Usually it’s 2 TBSP of ground coffee per six ounces of water, but when making iced coffee (depending on how strong I want to make it) I use no less than 4 TBSP of grounds per every six ounce cup. For the whole pot that would be 3 cups of ground coffee. Sometimes I go over, but I’m just crazy like that!
- I, personally, don’t like to add sugar to mine, but if you are so inclined you should add the sugar in immediately after it is done brewing, while it’s still hot. If you add sugar, I suggest about a teaspoon per cup. (more…)
